A Healthy Lunch Salad

This is a very simple idea for a lunch salad, if you want to have something healthy and delicious this is perfect! It’s very easy, all you need is tomatoes, corn salad, pine nuts and a dressing.

Cut up the tomatoes and mix them with the corn salad. I made a dressing with sun flower oil, vinegar, mustard, sugar and a little bit of salt. You can always choose your own dressing of course.

Roast the pine nuts in a frying pan, make sure they don’t burn! You don’t want black pine nuts… Mix it all up and you’re done! Easy and healthy.
